Empress Sisi’s favourite dessert: Pancake fans with strawberries and ice cream
One might think that the high-rank guests could eat as much as they wished during a dinner, however, they often had to leave the table with empty stomach because the Emperor ate very quickly and Empress Elisabeth hardly ate anything. Since nobody must eat after the Emperor left the table because it would have been an offense against the etiquette, the family members and the highest-ranking guests often had to finish their dinner at Sacher Hotel, while the remaining dishes were sold by the servants.
Although Sisi usually refused to eat much, she loved eating sometimes (it will be discussed in another article). She was particularly fond of the following dessert.

Family dining room at Schönbrunn Palace
During Elisabeth’s time the former room of Maria Theresa’s daughter, Marie Antoinette, who was beheaded during the French Revolution, served as a family dining room. The table now is laid for a family dinner with Viennese porcelain, Viennese court silverware and crystal glasses. When the imperial family dined here alone the occasion was less formal than at court dinners which were ruled by the strictest court etiquette. The Emperor himself determined the seating plan and conversation was permitted across the table, whereas at court dinners one could only converse with one's immediate neighbour in an undertone.

On official occasions French dishes were served, while at family dinners Viennese cuisine and simpler dishes were preferred. These included Wiener schnitzel, beef goulash, beef with onions, steamed dumplings or 'Kaiserschmarren' (meaning literally 'the emperor's nonsense', a sweet shredded omelette made with raisins and served with fruit compote).
The painting in the middle shows Franz Joseph at the age of 20. The Emperor used to sit in front of his painting and the Empress opposite him. Empress Sisi’s favourite dessert: Pancake fans with strawberries and ice cream
(Fächer-Palatschinken mit Erdbeeren und Eiscreme)
8 thin egg pancakes prepared according to basic recipe
14 oz (about 420 g ) ripe, fresh strawberries
3-4 T (tablespoon) powdered sugar
Juice and zest of 1/2 untreated lemon
Fresh mint
4 scoops of vanilla ice cream
Powdered sugar for sprinkling
Prepare the pancakes according to the following recipe:
Thin egg pancakes
8 oz (about 240 g) flour
4 eggs
1 1/2 cups milk (1 cup=2,5 dl)
1 pinch salt
2 oz (about 60 g) clarified butter for frying
Powdered sugar for sprinkling
Mix the flour with eggs, milk and salt with an electric hand mixer to get a smooth batter. Let it stand for at least 30 minutes so it can swell. Heat some clarified butter in a medium-size pan and add about 1/8 of the batter by using a ladle. Lightly tilt the pan to make the batter cover it.
Fry a total of 8 pancakes over medium heat on both sides until golden yellow and fill as desired. Eat lukewarm. Sprinkle them with powdered sugar.
Tip: The pancakes turn out lighter when mixed with 1 cup milk and 1/2 cup soda water
Spread the pancakes like fans on four dessert plates.
Wash and drain the strawberries. Put half of them on the pancakes. Puree the rest in a blender together with powdered sugar, lemon juice and zest at the highest level or stew lightly and then press through a course sieve. Divide that into four parts then place next to the pancakes. Finally, add one scoop of ice cream to each plate.
